Pairing Merlot with food provides lots of options. It does better with heavy sauces than the big tannic Cabernet Sauvignons. Its ample acid structure does surprisingly well with tomato based dishes as well. Strongly flavoured poultry and fish also complement Ghost Wines' Sparkling Merlot surprisingly well. It should be a go to for hot Australian Summers or for those who want a little more depth in their wine and food pairing.

Watermelon, Pickled Ginger and Fetta Salad
Ingredients:
1 x 120g bag of baby spinach and rocket leaves
2 cups of cubed watermelon
1.5 tablespoons of diced pickled ginger (available from the Asian food aisle)
1 cup of crumbled fetta
1.5 teaspoons of Red Wine Vinegar
2 tablespoons of chopped walnuts (pine nuts also work well)
Method:
In a bowl mix salad leaves, watermelon and picked ginger. Sprinkle crumbled fetta and walnuts. Pour vinegar and season with salt and pepper to taste. Lightly combine ingredients. Serve and enjoy!
